I keep thinking I should write a cookbook called The Lazy Vegetarian, because, as I said on Plurk, I'm a food snob, but I'm usually too lazy to make food-snob food. Every once in a while, I like to make something crazy that uses every pot I own and takes all day, but for everyday dinners, I want things with almost no labor involved.

The other day, I made a yummy dinner that was super-easy, but looks complicated, because it's colorful and pretty, and has a sauce.


(I had a recipe for this that I found online, but I ended up winging it, because the recipe was on my computer, which was shut down due to storms when I was ready to make the stuff.)

- 1 bunch flat-leaf parsley, chopped
- 1/3 cup or so olive oil
- 1 medium shallot, diced
- about 2 T lemon juice
- 2 cloves garlic, minced
- salt and pepper to taste

Stick it all in a food processor and blend until it's saucy. :-) It's supposed to have about a T of other herbage in it, like basil or oregano, but I forgot that part, and it tastes just fine. It's better the second day, after the flavors meld and mellow out some.


This is so easy, it's almost embarrassing. I took a can of black beans and a can of fire-roasted diced tomatoes, dumped 'em in a saucepan, and doctored them with some salt, cumin, and cayenne. I let them simmer until they weren't too liquidy anymore. Then I put that mixture on tortillas, crumbled some queso fresco over it, put a little chopped cilantro on, and added the sauce. Kind of messy, but delicious!
