Yum yum, fall fud

I made my favorite fall recipe today. Mmmm.
1 onion, minced
3 cloves garlic, minced
1 jalapeno, minced
heaping tablespoon curry powder
about a Tbs grated fresh ginger
pinch o salt
Put all these in a bit of olive oil in a large pot or pan and saute for about 4 minutes. Then add:
4 c. veggie stock
2 chopped tomatoes
1 c. dried lentils
2 sweet potatoes, peeled and cubed
Bring it to a boil, then reduce the heat and simmer for 30 minutes or so. Right before serving, stir in as much chopped cilantro as you want and a big spoonful of tofu sour cream. (You can also use a cup of plain yogurt, but I tried the sour cream this time and like it better!)
The recipe says you can use parsley instead of cilantro if you're a silly soap-tasting person. :-)
